SORNIONE – White Wine
The grapes come exclusively from Cascina Montagnola owned vineyards located in Montagnola, in the beautiful hilly area around the town of Viguzzolo.
Sauvignon grapes in purity.
The grapes are harvested by hand, in boxes of 15 kg each, about three weeks after physiologic ripening, therefore as a ‘late-harvest’.
Soft pressing, followed by cold static decantation; clear must is then stored in new french oak barrels where alcoholic fermentation takes place.
The wine is aged in oak barrels for 8 months, then another 6 months in bottles of 0.5 liters.
Color: golden yellow with greenish reflections.
Bouquet: large-width and elegance, with notes of toasted tangerine peel, candyfloss, candied cedar and custard cream.
Taste: full bodied and harmonious, with acidity to support the high content of residual sugar, long-persistent.
Elaborate appetizers patè-based, medium and long aged cheese, even slightly marbled (perfect with aged Montebore), marzipan sweets.
